If only I could say more than just thank you, because the joining of this sacred orb with the blandest (is that a word?) of all carbs started a revolution.

Not only can we put avocado on toast, said the foodie revolutionists of late 2016, we can put ANYTHING on toast.

And thus, a miracle was born. Nut butter, dippy eggs, hummus, fruit—you name it? It’s on toast. And I’m forever grateful.

As much as I enjoy popping into a local eatery [if you haven’t been, Alchemy Juice Bar & Café and Zest Juice Co both hold high awards in my book] to browse the latest toast combos, a thought came upon me.

This is a meal I can’t screw up at home.

No oven to burn my casserole, no butcher knife to slip and cut my finger, and relatively no mess to clean up in my tiny apartment kitchen. I can do this at home! And do it at home I did. After I unearthed my love for avocado toast, I made it a regular meal about three times a week for two months straight. Oops. What can I say? An easy dinner (or breakfast!) like toast and toppings is a no-brainer, and way cheaper than at any trendy juicery.

I began to explore playing around with different combinations of spreads, toppings, garnishes, and bread types. Although my love still runs deep for a classic Avo + Whole Grain topped with Trader Joe’s “Everything But the Bagel” seasoning blend ($2. Buy it. Not affiliated, I just love it), some of these creations made me realize that stepping outside of the box can be fun. I mean look at that pretty beet hummus! I would’ve never imagined I’d be combining beets, chickpeas and toast, but yum. Party in my belly.

I am a Millennial and I love Toast

A few weeks ago, there was an uprising after Money Magazine tweeted a quote from a millionaire stating “Avocados are the reason you can’t buy a home”.

EXCUSE ME?

I will have my avocado and eat it too, thankyouverymuch. And buy a house one day, to boot. For a little backstory, the article went on to state that because millennials are spending “$19 on smashed avocados and four coffees at $4 each” we will not have the finances to buy a home in our future. I don’t know where this guy is buying “smashed” avocados for $19, but they must be laced with something pretty magical. I get my avos from Kroger for anywhere from $0.80 to $1.50 each, and half of that bad boy spread on a piece of toasted bread will keep me full for hours.

My point here is that if you want to buy that pretty (and really flipping tasty) avocado toast, BUY THE TOAST. I’d like to assume that most of us are responsible adults and can tailor our spending habits according to our financial goals. Now, if you’re buying fancy pants toast 6x a day each week to satiate your obsession, maybe it’s time to take your talents to the kitchen and start making your own. I’ve listed plenty of options here to try out, and they’re all delicious!
