Light & Healthy Appetizer: Avocado Deviled Eggs

Life is about celebrating the little things, right?

Let’s celebrate that this is the first time in idontevenknow how many weeks I’ve posted twice in a week. When I started this blog back in May, I was bright-eyed, bushy tailed, and had all of the intentions to post the best recipes and restaurant round-ups at LEAST twice a week. Lol. Maybe one day I’ll get there.

You know what life is also about?

Balance.

I mean YEAH. I’d love to have time every week to hang out with friends, make it to my 6am work out classes (currently obsessed with System of Strength, check ’em out!), eat healthy, go out for a wine tasting with my boy, make/take/post the yummiest looking recipes for the blog, get 8 hours of sleep each night, and maybe a littleee relax time too. Oh, and add in 40-50 hour work weeks at my corporate job. Easy!

Unfortunately, balance also means prioritizing, and sometimes (read: a lot of the time) certain things get pushed to the bottom of the list. It happens! Luckily, I had a little more time on my plate this weekend to test out some pretty rockin’ deviled eggs recipes, including these babies.

Avocado in anything is good, so I’m not shocked I loved this healthier version of my fave tailgate food.

Whipping up a batch of these eggs is so similar to preparing a bowl of guac, you might even reach for the tortilla chips on accident.

Avocado, cilantro, lime juice, salt and pepper. Gang’s all here! Just add in a little Dijon, paprika, and egg yolks and you’re good to go. Enjoy!
