4 Step White Chickpea Chili

Ingredients

Chili:

  • 1 tbsp olive oil
  • 3 cloves garlic
  • 1 yellow onion
  • 1 lb lean ground turkey
  • 2 cups vegetable stock
  • 1 can chickpeas, rinsed and drained
  • 1 zuchinni, chopped
  • 1 orange pepper, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt and pepper, to taste

Optional Garnishes:

  • 1 handful cilantro, chopped
  • 1 tbsp shredded cheese, per bowl
  • 1 tbsp plain greek yogurt, per bowl

Instructions

  1. Heat olive oil in a large pot over medium high heat, add onion and garlic and cook until translucent (about 5 minutes).

  2. Add in ground turkey, cumin, chili powder, and salt and pepper. Cook turkey until browned (5-7 minutes). Break up the meat as it cooks.

  3. Reduce heat to medium and add in vegetable stock, pepper, zuchinni, and chickpeas.

  4. Simmer for 15-20 minutes until the chili has thickened and the zuchinni is tender. Serve with optional garnishes (garnishes not included in nutritional information).
