Rice Krispies Chocolate Peanut Butter Log

My mom used to make these Rice Krispies chocolate logs for us as kids and the other day I had the most random hankering for one. I’ve never actually made it myself as an ~adult~ so I gave it a go and couldn’t believe how easy it was! I won’t waste your time any further, here’s the recipe so you can make it too:

Rice Krispies Chocolate Peanut Butter Log

Ingredients

  • 1 bag marshmallows
  • 1/4 cup peanut butter
  • 1/4 cup butter
  • 5 1/2 cups Rice Krispies
  • 3/4 cup peanut butter
  • 1/2 cups chocolate chips

Directions

  1. Line a 9×12 baking pan with parchment paper and spray it with cooking oil. Set aside.
  2. In a large bowl that’s microwaveable, pour in your marshmallows then butter and peanut butter. Microwave for 1 and a half minutes. Once heated, stir and fully combine.
  3. Pour in your Rice Krispies and mix together. Press this into the oiled pan. TIP – spray oil on your spatula as you press down to help keep the mixture from sticking to your spatula! Throw this in the fridge while you complete step 4.
  4. In a separate microwaveable bowl, pour your chocolate chips and 3/4 cup peanut butter. Microwave and stir, in increments of 30 seconds, until fully melted.
  5. Pull the pan out of the fridge, pour and spread your chocolate mixture. Work quickly before the chocolate seizes!
  6. Put the pan back in the fridge until the chocolate is more firm, but not totally hard. Then, you’ll roll up the Rice Krispies using the parchment paper as you pull it away and continue to roll (like sushi!)
  7. Freeze for an hour, then cut into pieces. Enjoy!
