Healthy Summer Corn Elote

How much fresh sweet corn can I eat this summer? Answer: The limit does not exist. Not only is corn SO cheap, but it’s so tasty at a summer cookout too! Try this easy recipe to wow the crowd at your enxt summer BBQ.

Ingredients

  • 5 ears sweet corn, boiled in a large pot
  • 1 cup Greek Yogurt
  • 1/2 red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 green pepper, diced
  • 1/4 cup feta cheese (optional)
  • 2 tsp Live 24K Golden Fuel
  • salt and pepper, to taste
  • lime juice, to taste

Instructions

  1. Shuck corn and boil in a pot for 10 minutes Once the corn has been boiled and cooled, shave the corn off the cobs into a large mixing bowl. 

  2. Mix in all other ingredients (except feta and cilantro), and dump into a large cast iron skillet or other cooktop pan. Heat the ingredients on medium heat for 5 minutes, stirring every few minutes. 

  3. Once thoroughly heated, transfer to a serving dish and top with feta and cilantro. Enjoy!
