Smoked Salmon Pizza

Ingredients

  • 1 Cauliflower Pizza Crust (Trader Joe's is my JAM)

For the sauce:

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 5 ounces Neufchatel cheese (or cream cheese) room temperature
  • 2 tbsp chopped dill
  • 1 pinch black pepper
  • 1 tbsp lemon juice
  • 1 whole lemon, divided for use

For Pizza:

  • 6 ounces smoked salmon
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 avocado, sliced thinly
  • 1 handful fresh arugula

Instructions

  1. If using the cauliflower pizza crust, bake the crust according to package directions. Once the crust is cooked, adjust oven temp to 400 degrees.

  2. While crust is baking, mix ingredients for sauce. Spread over pizza crust, and then top with almost all of the shredded cheese. Bake in the oven for 10 minutes, or until cheese has melted through. 

  3. Remove from oven; top with salmon slices, avocado slices, and arugula leaves. Sprinkle with pepper and top with the remaining cheese and place back into the oven for an additional 2-3 minutes to warm salmon through.
